The Mediterranean cuisine; ingredients, origin and evolution.

The Mediterranean cuisine is the cuisine of the countries which border the Mediterranean Sea.

 

The Mediterranean cuisine is the cuisine of the countries which border the Mediterranean Sea, its name comes from the Latin and means Sea among two lands; with a warm weather and moderate winters is the best atmosphere to farm the food of the Mediterranean diet.

The Mediterranean diet is characterized by being rich especially in olive oil. This oil is a common ingredient in almost all its dishes because its production and consumption worldwide is produced in this part of the planet.

Fish, seafood, vegetables, fruits, meat, flour, spices and condiments are the typical ingredients of the Mediterranean cuisine.

This kind of food has been developed during centuries thanks to the different civilizations that have habited this region of Europe.

It has a Greco-Roman origin which provided oil, bread and wine; over the centuries and the different civilizations new food was added to the diet such as the meat from the German towns in the north of Europe, the vegetables like the aubergines or artichokes from the Arabs, the rice, the pasta…

When Colón discovered America also did a contribution adding to our dishes the potatoes, the pepper and the tomatoes.

Even if the food is common to all the regions in the mare nostrum, it is true that each area prepares the dishes in a different way which makes the Mediterranean cuisine a varied one having with the same ingredients a thousand kinds of different dishes.

The Mediterranean diet is, more than a diet, a way of life, the life in the Mediterranean…the habits adopted every day have influenced this kind of cuisine.

Habits such as the siesta after physically hard jobs (due to the fact that the major activity was agricultural), have established this kind of cuisine throughout the centuries.

The food that makes the diet up offers a natural protection facing cardiovascular diseases and several kinds of cancer.

Recently this diet has been catalogued as the second one healthier in the world, after de Japanese one, due to its benefits for the human body.

The development of the Mediterranean cuisine has always been continuous, the socio-cultural changes have caused the named fast food; the increase of urban population and the sales of industrialized food products have caused the decrease of the natural food consumption.

The globalization, the capacity to travel and the media have provided us different international food in our day life, adding them to the Mediterranean diet, sauces, Japanese, Arabic or Chinese dishes…
